Baked Apples
Recipe for 4
Ingredients
4 large organic apples
1 tablespoon of unsalted butter, melted
30g honey e.g. *Manuka Honey or maple syrup
50g raisins/ sultanas
30g chopped walnuts
½ teaspoon cinnamon
½ teaspoon *ginger
Method
Preheat the oven to 180 degrees Celsius/ fan 160 degrees Celsius/ Gas Mark 4.
Half the apples and scoop out the core, you should have a nice hollow in the apple halves but not too hollow, otherwise the apple will collapse in the oven.
Stuff with the rest of the ingredients, that has been mixed together.
Put on a roasting tray in the oven on a bed of hot water (to prevent them sticking).
Bake for 40 minutes.
Serve with a dollop of live yoghurt, coconut yoghurt, a sprinkle of cocoa powder and/or more cinnamon.
*Manuka Honey and ginger may further benefit digestion and gastrointestinal health.
