Apple and Pear Crumble
Recipe for 3-4
Freezes really well
Ingredients
For the base
3 organic apples
2 organic pears
½ teaspoon cinnamon
½ teaspoon ginger
75g chopped and pitted dates
For the crumble
100g walnuts
150g rolled oats (I use Kavanaghs’s gluten-free organic porridge oats from Aldi)
1 teaspoon of vanilla essence
4 tablespoons of coconut oil
4 tablespoons of maple syrup
1 teaspoon ginger
1 teaspoon cinnamon
Method
Chop the apples and pears into bite sized chunks, taking out the core and pips.
Stew on a low heat with the cinnamon, ginger and dates with a little water, to just covers the apples.
Allow to cook for about 20 minutes or until the fruit is soft.
For the crumble layer, begin by blitzing the walnuts in a food processor/ Nutri Bullet.
Add the blitzed walnuts to the oats in a mixing bowl.
Meanwhile, melt the coconut oil in a saucepan and add the maple syrup, ginger, cinnamon and vanilla essence.
Add the melted coconut oil mixture to the mixing bowl that contains the walnuts and oat mix. This is the complete crumble layer.
Use a baking dish/ bowl that is oven proof and tip in the cooked fruit layer. Top with the crumble.
Bake for 20 minutes and until the top is a nice golden brown.
Serve with a dollop of live yoghurt, coconut yoghurt, a sprinkle of cocoa powder and/or more cinnamon.
